I had a gas guage that read full when it was empty and I found that it was grounding out causing erratic readings

Is this truck a dual tank setup?
If so, the electrical part of the valve may be working so the gague is working, but the fuel valve may not be opening to let the fuel get to the engine.

My 84 K10 has some erratic readings at times as well, which makes it hard to guess when I'll run out of gas, but there's never a gas supply problem, or not yet...and since I have dual tanks, I usually just keep one as a reserve. If it is grounding out, where is the most likely place? Near the unit?
