I got 84 GMC with a 305 V8 I just got a Edelbrock performer plus cam & intake 2701 EPS I'm going to buy the time chain 7800 for it. It says on the card inside I need to get the sure seat valve springs #5802 i'm wonder if the stock springs would work kit

If it is a stock 84 305 the springs will not be strong enough for the up graded cam you have. You should buy lifter to go with the cam. If the cam did not come with the kit for the cam & lifters.
If you only wanted to change the cam you should have got a stock replacement style cam. When you pick a cam you try to match the upper part to work together. Is you springs new stock one, if they are you might be able to use the performer cam one step down for the cam you got. If the cam lift is to big for the spring tension you can puts the valves in to the pistons , all so they can close slower then they should making bad running motor if does not burn the vales or bending them. If you go to Edelbrock sit check out the springs to see what the spec. are you can see what different tension there made for. you can get a Speed-pro timing chain other cheaper type as long as it a double roller but a good to better one most speed shops have good cheaper one or top notch.
